In Spanish, al pastor means in the style of a shepherd. On Mexican menus it means pork that is seasoned with a sweet/hot blend of spices and slowly cooked on a vertical rotisserie grill, similar to lamb shawarma. The meat is shredded and paired with pineapple salsa in a corn or flour tortilla. A variation of the taco is what some restaurants call a huarache (which means sandal): a broad, unfolded tortilla spread with bean paste and topped with al pastor, garnishes, and cotijo cheese.
