About Cuisine

There are elements of soul food in many great regional dishes and cuisines, from the fried chicken palaces of the South to the rib joints of the Midwest’s cities (all founded by pitmasters who came up from the South), but there are few purely soul food restaurants outside of major cities. In fact, many southern cafeterias and cafes serve what is, in effect, soul food – traditional working person’s fare, cooked and served by African-Americans, and enjoyed by customers of all races.
