A cuisine developed out of the four cultures that contribute to New Mexico’s rich character: Anglo, Native-American, Spanish, and Mexican. The taste and heat of chile peppers are crucial in such dishes as carne adovada (chile-marinated pork) and chilies rellenos (breaded and fried chile peppers).
