About Cuisine

Texas, Arizona, California, and New Mexico each has its own interpretation of Mexican-style food, but there now are restaurants throughout the country that strive to serve meals that actually reflect regions of Mexico. Exemplified by svelte mole sauces and such distinctive flavors as chile, garlic, chocolate, epazote (a pungent herb), and huitlacoche (an earthy corn fungus), most Mexican food is not necessarily fiery-hot … but it is always a taste-buds adventure.
