Curiously, chili parlors are a rarity in Texas, where chili originated. Most dedicated chili restaurants are in the Midwest around the Great Lakes, where the chili is entirely different brew than Texas’s classic chunked beef stew. Heartland chili is served on spaghetti noodles or mixed with elbow macaroni and beans. It goes without saying that chili parlors are less than formal establishments; and for many people the dessert of choice is a couple of discs from a tube of Tums.
