About Cuisine

Jambalaya, crawfish pie, gumbo, po-boy sandwiches, red beans and rice, and boudin sausage are the best-known foods of Louisiana. Look also for terrific Italian flavors (i.e. garlic), one of the lesser-appreciated facets of Creole cuisine. It used to be that Creole meant New Orleans fare, Cajun was the food of the country; but the two are fairly well intertwined in most of today’s restaurants.
