About Cuisine

A robust cookery brought to the high plains of the West by Basque shepherds and cowboys, served at communal tables in the hotels where they stayed when they came to town. Lamb or oxtail stews are favorites, as are baccala (dried cod), tripe, and big steaks, too. Virtually everything is infused with garlic. Expect to tear off hunks of French bread and drink plenty of red wine at any good Basque meal.
