Expect beef brisket and hot links in the Southwest, pork shoulder in the South, mutton in Western Kentucky, ribs and sausages in the cities of the Midwest. Sauce options range from none (in Texas) to mustard to vinegar to molasses-sweet. Side dishes can include boiled potatoes, saucy beans, Brunswick stew, or hushpuppies, and bland white bread is almost always part of the meal – suitable for mopping food that is by definition a juicy mess.
