Rosita's - Scottsbluff, NE

This friendly sit-down cafe with festive south-of-the-border décor is a small place with a small kitchen and every dish is made from scratch just before being served. Even the corn chips are cooked when you order them. Amazing chips they are, nearly as three-dimensional as a sopaipilla, fried so they puff up and become airy triangles with fragile skin

The house specialty, panchos, is comprised of ordinary nacho ingredients, but because Rosita's chips are so distinctive, it is an extraordinary dish.

A close view of the pancho plate shows how different these tortilla chips are from plain flat ones.

Why is there such good Mexican food in Scottsbluff, Nebraska? For the better part of the last century, immigrants who came to work in the region's prolific beet fields became citizens and brought their cooking traditions with them.

Rosita's way of quick-frying corn chips give the restaurant's tacos a fragile nature unlike any others.

Chips are essential at any Rosita's meal. That guacamole in the middle of the dish is mighty good, too.

This is one heck of a good enchilada, whether true-Mex or not. Scottsbluff is an oasis of good eats in the Great Plains.

Chunky and alarmingly hot, pico de gallo is a fine condiment for just about any Mexican meal ... or great simply as something to scoop up with Rosita's chips.

Can you say, 'Oooo-eee, that's hot

I was smitten by Rosita's once-modern upholstery pattern.
