Louie Mueller has added a new, modern dining room that does not have the rich, smoky patina of the old brick-walled restaurant; but no matter where you eat in this venerable barbecue, the flavor is historic. Here is a restaurant where beef brisket (as well as sausage, ribs, tenderloin, and chicken) are cooked and served the way pitmasters have been doing it for decades in this part of Texas. Step up to the counter behind which you have a view of the old smoke pits. Order your meat by the pound or plate. It is presented on a serving tray, which you carry to a table.

Louie Mueller’s brisket is a thing of beauty. It is sliced relatively thick, pepper crusted, its outside turned black from hours in the pit, its fat-laced interior moist and veritably dripping protein potency. It is served with a cup of sauce reminiscent of au jus, and there is some hotter sauce set out on the table, but forget sauce, forget side dishes. Just contemplate this beef. There is none better anywhere.

The fatty brisket, at the lower right, is simply as good as barbecued brisket gets.  That's lean brisket towards the upper left, and the two are separated by a link of chipotle sausage.

The meat inside a Mueller's hot link is soft and tender, but the casing is plenty chewy. Look what happened to the plastic fork I tried to use to separate a hunk.

In our opinion, the hot sauce set out on Louie Mueller's tables is superfluous.  The meat is self-sufficient.  On the other hand, toothpicks are a necessity.
