It's an all-too-common experience for Roadfooders: we take for granted a beloved local specialty, only to find that it's unavailable in our new hometown. This is especially true for members of Congress and their staffs, who search D.C. in vain for loosemeats, say, or Grape-Nuts pudding. Or Texas/Czech kolache, until 2010, when Texas native Ileana Fernandez opened Kolache Kreations in Ellicott City, MD. We actually have a very good kolache place near us in Beaver, PA called Cafe Kolache. They have both the fruit topped and meat filled kolaches. The owner is originally from Beaver, but lived in Houston for a while.
