West Indies Salad
The year: 1947. The chef: Bill Bayley, of Mobile, AL. The dish: West Indies Salad. Chef Bayley invented this simple dish of fresh crabmeat long-marinated, along with fresh onions, in a vinaigrette, and it's been popular in Mobile, but known practically nowhere else, ever since. Jane and Michael Stern visit with Lynne Rossetto Kasper this weekend on The Splendid Table to discuss this Alabama delicacy. The only thing vaguely similar I have had is a marinately crab and (julienned) artichoke hearts at an Italian restaurant in Santa Monica that has recently closed, i Cugini.
