
Listed on the menu at the Riverview Restaurant in Moosup, CT is Archie’s Favorite Pizza: Fresh Roasted Green Peppers, Red Sauce, Parmesan, Romano, Pepperoni and Mozzarella Cheese, “Hold the Circle!” We’ve always wondered what that latter statement could possibly mean: what in the world is the “circle,” and why would we want to “hold” it? When we met Mahri and friends there last month, we discovered the secret: the circle is the cardboard insert placed underneath the pizza to soak up the oils. Normally, we consider green peppers to be the kiss of death on pizza, as their sweetness seeps into the cheese so much that you can taste the peppers even after you pick them off. Not so with this Riverview specialty, as the peppers are oven-roasted! The combination of the buttery crust, robust sauce, and the peppers tasting like actual peppers (!) easily made this pizza one that we’ll order again and again (and the pizza wasn’t overly greasy without the circle, either).
